Classic Wedge Salad (Paleo and Keto-Friendly)

The dressings commonly used on this classic salad are full of toxic fats and chemicals that disrupt our cell and hormone communication.  Over time, consumption of these fats can deteriorate our health.  We have revamped this well-loved salad with healthy fats for you to enjoy!

SERVES 4

 

SALAD INGREDIENTS:

1 large head of organic iceberg lettuce, quartered

½ pound of nitrate-free, sugar-free bacon

1 organic Roma tomato, quartered lengthwise and cut into thin slices

½ small organic red onion, thinly sliced

½ c. organic parsley, roughly chopped

Freshly ground pepper

 

DRESSING INGREDIENTS:

16 oz. avocado oil mayo

½ of an organic lemon, freshly squeezed

1 tsp. Bragg’s Liquid Aminos

Coconut milk or water to thin out dressing to desired consistency

 

DIRECTIONS:

While the bacon is cooking prepare vegetables as listed above.

Combine the mayo, lemon juice and liquid aminos in a medium bowl.  Depending on how thick or thin you like your dressing, you may want to thin it out.  If you like a thinner consistency, slowly add the coconut milk or water and whisk after each addition until it reaches your desired consistency.

Remove the bacon from oven and let cool slightly. Chop into crumbles.

To prepare the salads, lay a wedge on each plate, spoon dressing over the wedge, sprinkle with the remaining toppings and a generous topping of freshly ground pepper.  Enjoy!
