Snickerdoodle Cookie Ice Cream Sandwiches

Sweet and spicy, these cookies are a family favorite. They are delicious alone or can be made into an ice cream sandwich. our Kids love helping make these!

COOKIE DOUGH:

4 c. almond flour (I buy mine in bulk here)

1/2 tsp. sea salt

1/2 tsp. baking soda

1/2 c. raw honey

10 tbsp. palm shortening, coconut oil or butter, melted

3 tbsp. vanilla

 

COATING:

4 tbsp. coconut sugar

4 tbsp. cinnamon

Optional: Your favorite vanilla ice cream. You can buy a dairy-free vanilla ice cream or use ice cream from a local farm. 

 

DIRECTIONS:

Cover jelly roll pans with parchment paper and preheat oven to 350 degrees.

Using a small sauce pan to melt the fat on low. Mix all dry ingredients in a bowl. Add the melted fat, honey and vanilla to the mix. Stir well to combine.

Mix coconut sugar and cinnamon in a small bowl.

Roll dough into balls and then in the coating mixture. Lay the balls of dough on the cookie sheet a few inches apart. Press cookies flat with the bottom of a glass or measuring cup, leaving them around a half-inch thick.

Bake at 350 degrees for 10 minutes or until golden brown.
