Pecan Balls

My mother would make pecan balls often during the winter months. I created a healthier version to what I grew up eating and they are sure to be a crowd-pleaser at your next get together! My husband and I love having these as a special treat with a cup of coffee.

Ingredients:

2 c. blanched almond flour

4 tbsp. coconut flour

1/4 tsp. sea salt

5 tsp. maple syrup or Lakanto Monk Fruit Syrup

8 tbsp. palm shortening or ghee

1 c. pecans, chopped

2 c. Lakanto Monkfruit Powder Sugar Substitute

Directions:

Preheat oven to 325 F. Place a sheet of parchment paper on a baking sheet. Combine all ingredients in a large bowl and mix with hands.

Once combined well, scoop out small amounts of the dough and roll into balls. Place on baking sheet. Bake for 18-20 minutes.

Let cool and roll in powdered Monkfruit. Enjoy!
