Bacon Cheddar Roasted Asparagus
AN AMAZING AND SATISFYING LOW-CARB, SIDE THAT IS SURE TO IMPRESS!
Serves 6-8
Ingredients:
2 bundles of organic asparagus or best quality available, bottom ends trimmed
2 c. raw or organic sharp white cheddar, shredded (find real food near you)
1 c. pastured sugar-free bacon, cooked and chopped (find real food near you)
4 tbsp. bacon drippings or lard, melted
Sea salt and pepper to taste (get great prices on salts and spices here)
Directions:
Preheat oven to 425 degrees. Lay a sheet of parchment paper on a jelly roll pan. Spread out asparagus and drizzle with bacon drippings or lard. Bake for 30 minutes, toss have way through. Pull tray out of the oven. Put oven on low-broil. Sprinkle with cheese and bacon. Put in oven until cheese bubbles and bacon gets crispy on the edges. Generously salt and pepper. Enjoy!
Tip: I usually bake my bacon on a jelly roll sheet lined with parchment paper at 400 for about 25 minutes or until crisp. Pour your bacon drippings into a dish and reserve for this recipe, cooking eggs or roasting other veggies.
